Yoghurt Cake with Vanilla Sauce

Yoghurt Cake
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup butter
- 2/3 cup sugar
- 2 eggs
- 1 cup Mountain High® plain yoghurt
- 2 teaspoons grated lemon peel
Vanilla Sauce
- 1 pasteurized egg, separated
- 1 cup Mountain High® vanilla yoghurt
- 1 tablespoon sugar
Preparation
- Heat oven to 350°F. Grease 9-inch square pan with shortening; lightly flour. In medium bowl, mix flour, baking powder, baking soda and salt; set aside.
- In another medium bowl, beat butter and 2/3 cup sugar with electric mixer on medium speed until light and fluffy. Beat in eggs, one at a time. Stir in 1 cup yoghurt and the lemon peel. Stir in flour mixture until well mixed. Pour batter into pan.
- Bake 30 to 33 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes before serving.
- Meanwhile, make vanilla sauce. In small bowl, beat egg yolk with fork or whisk until lemon colored; add 1 cup yoghurt. Mix well. In another small bowl, beat egg white with electric mixer on high speed until foamy; add 1 tablespoon sugar, and beat until stiff peaks form. Fold egg white mixture into yoghurt mixture. Serve warm cake with vanilla sauce.
Tips
- If desired, unbleached flour can be substituted for the all-purpose flour.
