Ingredient List

Yoghurt Cake

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter
  • 2/3 cup sugar
  • 2 eggs
  • 1 cup Mountain High® plain yoghurt
  • 2 teaspoons grated lemon peel

Vanilla Sauce

  • 1 pasteurized egg, separated
  • 1 cup Mountain High® vanilla yoghurt
  • 1 tablespoon sugar

Preparation

  1. Heat oven to 350°F. Grease 9-inch square pan with shortening; lightly flour. In medium bowl, mix flour, baking powder, baking soda and salt; set aside.
  2. In another medium bowl, beat butter and 2/3 cup sugar with electric mixer on medium speed until light and fluffy. Beat in eggs, one at a time. Stir in 1 cup yoghurt and the lemon peel. Stir in flour mixture until well mixed. Pour batter into pan.
  3. Bake 30 to 33 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes before serving.
  4. Meanwhile, make vanilla sauce. In small bowl, beat egg yolk with fork or whisk until lemon colored; add 1 cup yoghurt. Mix well. In another small bowl, beat egg white with electric mixer on high speed until foamy; add 1 tablespoon sugar, and beat until stiff peaks form. Fold egg white mixture into yoghurt mixture. Serve warm cake with vanilla sauce.

Tips

  • If desired, unbleached flour can be substituted for the all-purpose flour.
