Creamed Spinach

Ingredient List

  • 2 teaspoons olive oil
  • 1 pound fresh spinach, stems removed
  • 1/4 teaspoon kosher (coarse) salt
  • 1/8 teaspoon pepper
  • 1/4 cup heavy whipping cream
  • 1 clove garlic, finely chopped
  • 3 tablespoons grated Parmesan cheese
  • 2/3 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt

Preparation

  1. In a 12-inch skillet, heat olive oil over medium heat. Add spinach, salt, and pepper. Cook and stir for about 2 to 3 minutes, or until wilted. Remove the spinach from the pan and place into a colander; drain.
  2. Return skillet to medium heat. Pour in cream; add garlic. Cook and stir until cream thickens, 1 to 2 minutes. Add Parmesan cheese and yoghurt, mixing well. Add warm, drained spinach and cook for 2 minutes more to warm through. Serve warm.

Tips

  • Feel free to use Mountain High™ Plain Low Fat Yoghurt instead of Mountain High™ Original Plain Whole Milk Yoghurt, if you'd like.
