Chicken Tamale Pie

Ingredient List

  • 2 teaspoons olive oil
  • 1/3 cup chopped onion
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 can (7 oz) chopped green chiles, drained
  • 1 clove garlic, finely chopped
  • 2 teaspoons chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon ground cumin
  • 1 teaspoon coriander seed, crushed
  • 1 teaspoon dried oregano leaves
  • 1/4 teaspoon red pepper flakes
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 teaspoon sugar
  • 2 cups from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
  • 1 pouch (16 oz) cornbread mix
  • 1/3 cup water

Preparation

  1. Heat olive oil in 10-inch skillet over medium-high heat. Cook and stir onions about 4 minutes or until softened. Add chicken, chiles, garlic, chili powder, salt, black pepper, cumin, coriander seed, oregano, red pepper flakes, tomatoes, and sugar. Cook, stirring frequently, about 5 minutes or until chicken is no longer pink inside. Remove from heat; stir in 2/3 cup of the yoghurt.
  2. In a medium bowl, mix the cornbread mix, remaining 1 1/3 cups yoghurt and the water.
  3. Spray a 9x13-inch baking dish with cooking spray. Spread half of the cornbread batter evenly in the bottom of the pan. Spoon chicken mixture evenly over batter. Drop the remaining cornbread batter by spoonfuls onto chicken mixture; spread evenly.
  4. Bake uncovered at 375°F for 30 to 35 minutes or until the top is golden and the sides are starting to pull away from the pan. Serve warm.
