Simple, pretty, healthy. Also delicious with blueberry or raspberry preserves.

Ingredient List

  • 1/2 cup apricot preserves
  • 1/2 cup heavy whipping cream
  • 5 shortbread cookies
  • 2 cups from 1 tub Mountain High™ Original Vanilla Whole Milk Yoghurt
  • 5 pecan halves

Preparation

  1. Pour the preserves into a small bowl and stir until thinned.
  2. Beat whipping cream in small bowl until soft peaks form.
  3. Spoon 1 heaping tablespoon of the preserves into each of 5 parfait glasses. Top with 1 cookie. Repeat with remaining yoghurt and preserves. Garnish with a dollop of whipped cream and pecan halves.

Tips

  • Feel free to use Mountain High™ Vanilla Low Fat Yoghurt or Mountain High™ Vanilla Fat Free Yoghurt instead of Mountain High™ Original Vanilla Whole Milk Yoghurt, if you'd like.
