Apricot Parfait

Simple, pretty, healthy. Also delicious with blueberry or raspberry preserves.
Ingredient List
- 1/2 cup apricot preserves
- 1/2 cup heavy whipping cream
- 5 shortbread cookies
- 2 cups from 1 tub Mountain High™ Original Vanilla Whole Milk Yoghurt
- 5 pecan halves
Preparation
- Pour the preserves into a small bowl and stir until thinned.
- Beat whipping cream in small bowl until soft peaks form.
- Spoon 1 heaping tablespoon of the preserves into each of 5 parfait glasses. Top with 1 cookie. Repeat with remaining yoghurt and preserves. Garnish with a dollop of whipped cream and pecan halves.
Tips
- Feel free to use Mountain High™ Vanilla Low Fat Yoghurt or Mountain High™ Vanilla Fat Free Yoghurt instead of Mountain High™ Original Vanilla Whole Milk Yoghurt, if you'd like.
