Curried Fruit Salad

A deliciously different take on the traditional picnic side dish. Any combination of fruit works equally well for this recipe. Experiment with your favorites!
Ingredient List
- 1 cup from 1 tub Mountain High™ Original Vanilla Whole Milk Yoghurt
- 1 teaspoon grated orange peel
- 1/2 teaspoon curry powder
- 1 cup sliced strawberries
- 1 can (8 oz) pineapple chunks, drained
- 1 large apple, diced
- 1 cup seedless grapes, halved
- 1 banana, sliced
- 1/2 cup shredded coconut
- 1/2 cup raisins or currants
Preparation
- In a small bowl, gently stir yoghurt, orange peel, and curry powder until well combined; set aside. Toss remaining ingredients in a large bowl.
- Pour yoghurt mixture over the fruit mixture and toss to coat fruit evenly. Cover and chill for 1 hour. Serve chilled.
Tips
- Feel free to use Mountain High™ Vanilla Low Fat Yoghurt or Mountain High™ Vanilla Fat Free Yoghurt instead of Mountain High™ Original Vanilla Whole Milk Yoghurt, if you'd like.
