Dinner ready in 30 minutes! Enjoy this wonderful salad featuring Mountain High® plain yoghurt, shrimp and avocados.

Ingredient List

  • 1 lb medium shrimp, peeled, deveined, cooked and chilled
  • 1 cup sliced fresh mushrooms
  • 1 cup seedless grapes, cut in half
  • 1 cup Mountain High® plain yoghurt
  • 1 tablespoon lemon juice
  • 1 teaspoon grated lemon peel
  • 1/2 teaspoon dried rosemary leaves
  • 3 tablespoons fresh parsley, chopped
  • Leaf lettuce, if desired
  • 2 ripe medium avocados, pitted and chopped

Preparation

  1. In large bowl, mix shrimp, mushrooms avocado and grapes. In small bowl mix yoghurt, lemon juice, lemon peel, rosemary and parsley; fold into shrimp mixture.
  2. Place lettuce leaves on serving plates; top with shrimp and yoghurt mixture.
