Shrimp Avocados Salad

Ingredient List
- 1 lb medium shrimp, peeled, deveined, cooked and chilled
- 1 cup sliced fresh mushrooms
- 1 cup seedless grapes, cut in half
- 1 cup Mountain High® plain yoghurt
- 1 tablespoon lemon juice
- 1 teaspoon grated lemon peel
- 1/2 teaspoon dried rosemary leaves
- 3 tablespoons fresh parsley, chopped
- Leaf lettuce, if desired
- 2 ripe medium avocados, pitted and chopped
Preparation
- In large bowl, mix shrimp, mushrooms avocado and grapes. In small bowl mix yoghurt, lemon juice, lemon peel, rosemary and parsley; fold into shrimp mixture.
- Place lettuce leaves on serving plates; top with shrimp and yoghurt mixture.
