Greek Chicken Salad Sandwich Folds

Creamy yoghurt, feta cheese, cucumber, and chicken all folded inside pita bread--OPA!

Ingredient List

  • 1/2 cup Mountain High® original or lowfat plain yoghurt
  • 2 tablespoons crumbled feta cheese
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon chopped fresh dill weed
  • 1 clove garlic, finely chopped
  • 2 cups chopped cooked chicken
  • 1 cup chopped seeded cucumber
  • 4 pita fold breads
  • 1 cup spinach leaves
  • 12 slices plum (Roma) tomato (about 3 tomatoes)

Preparation

  1. In medium bowl, mix yoghurt, feta cheese, lemon juice, dill weed and garlic. Stir in chicken and cucumber.
  2. Heat pita fold breads as directed on package. Line half of each pita fold bread with spinach leaves; top with 3 tomato slices. Divide chicken mixture evenly over tomatoes; fold in half.

Tips

  • Try serving this chicken salad on a bed of spinach and tomatoes instead of inside the pita fold breads.
  • Pack this in your kids' lunch boxes, and serve with pita triangles or chips instead of the pita fold breads.
