Tyrolean Dumplings

A traditional old-world recipe that has been made a little lighter for the next generation to enjoy. Serve on a bed of sauerkraut with dill sauce or add to your favorite soup recipe.
Ingredient List
- 4 slices day-old bread
- 2 tablespoons warm bacon drippings
- 1 cup Mountain High® original plain yoghurt
- 1/2 cup water
- 1 egg
- 1 egg yolk
- 3 cups all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon fresh cracked black pepper
Preparation
- Remove crust from bread and discard. Cut bread into 1/2-inch cubes and place in a large bowl. Add bacon drippings: toss until all drippings are absorbed. Add yoghurt and water; mix well.
- In a small bowl, beat the egg and egg yolk. Add to yoghurt mixture. Add flour, salt, and pepper. Mix all ingredients well and allow to stand for 15 minutes.
- Meanwhile, fill Dutch Oven about 1/2 full with water; heat to boiling; reduce heat to simmer. With floured hands, knead dough mixture. Add more flour as needed so dough doesn’t stick to your hands. Shape dough into golf-ball size dumplings; place on a large sheet of waxed paper.
- Drop dumplings one at a time into the simmering water. Cover pot with a lid and simmer all dumplings together gently for about 15 minutes. Remove from water with a slotted spoon to drain.
