Ingredient List

  • 1 tablespoon olive oil
  • 1 large sweet onion (Maui or Walla Walla), chopped
  • 1 package (8 oz) fresh baby portabella mushrooms, sliced
  • 1 package (8 oz) fresh whole mushrooms, sliced
  • 1 clove garlic, sliced
  • 3 large bell peppers, chopped
  • 1/2 cup vegetable broth
  • 1 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
  • 1 tablespoon maple-flavored syrup
  • Grated peel of 1 medium lemon (2 to 3 teaspoons)
  • 1/2 teaspoon chopped fresh rosemary leaves
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 1/2 cups uncooked pearl barley

Preparation

  1. In a 12-inch skillet, heat the olive oil over medium heat. Add onions, mushrooms, and garlic and cook for about 10 minutes, stirring frequently. Stir in peppers.
  2. In a medium bowl, stir together vegetable broth, yoghurt, maple syrup, lemon zest, rosemary, salt, and pepper.
  3. Spray a large baking dish with cooking spray. Spread barley evenly on the bottom of the baking dish. Pour yoghurt mixture over the barley. Spoon vegetable mixture evenly over the yoghurt mixture.
  4. Bake uncovered at 350°F for 60 minutes, or until the liquid has been absorbed and the barley is tender. Stir before serving.
