Raspberry Bagel Spread

A little chopping, a swirl of a butter knife, and patience is all you need to create this marvelous spread for bagels or quick breads.

Ingredient List

  • 1 cup Mountain High® original or lowfat vanilla yoghurt
  • 1/3 cup chopped fresh or frozen raspberries
  • 2 tablespoons raspberry preserves

Preparation

  1. Place yoghurt into a strainer or colander lined with a flat-bottomed coffee filter; set strainer over a bowl. (Make sure there is enough space between the strainer and the bottom of the bowl so the whey can drain away.) Evenly distribute the chopped raspberries atop the yoghurt.
  2. Warm the raspberry preserves in the microwave on Medium for about 20 seconds to make preserves more fluid. Drizzle the preserves on top of the chopped raspberries. Swirl with knife through yoghurt, berries and preserves. Be careful not to over mix.
  3. Cover strainer and bowl with plastic wrap, and set in refrigerator to drain overnight.
  4. Carefully lift coffee filter out of strainer and flip yoghurt spread into a bowl. Spread on toasted or untoasted bagels or quick breads.
