Ingredient List

  • 3 cups uncooked rotini pasta (9 oz)
  • 2 teaspoons olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 2 teaspoons Italian seasoning
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt
  • 3 tablespoons all-purpose flour
  • 4 boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 package (8 oz) fresh baby portabella mushrooms, sliced and stems removed
  • 1 can (14 oz) quartered artichoke hearts, drained
  • 4 oz shredded Gruyère cheese (1 cup)
  • 2 cups from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt

Preparation

  1. Cook pasta according to package directions. Drain and set aside.
  2. Heat olive oil in a 12-inch skillet over medium-high heat. Add onions and celery; cook and stir about 4 minutes or until softened. Stir in Italian seasoning, pepper, and salt. Sprinkle flour evenly over vegetables to coat; stir to mix evenly.
  3. Add chicken to skillet. Cook, stirring occasionally, 6 minutes, or until chicken is no longer pink in center. Stir in mushrooms and artichoke hearts. Cook for about 2 minutes and remove from heat.
  4. Stir in 1/2 cup of the cheese and the yoghurt into the chicken mixture. Stir in pasta.
  5. Spoon mixture into a 3-quart casserole dish sprayed with cooking spray. Sprinkle the top with the remaining 1/2 cup cheese. Bake uncovered at 375°F for about 30 minutes or until golden brown on top.
