These dress up a light fruit soup, or make a quick breakfast surprise.

Ingredient List

  • 2 cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 6 tablespoons sugar
  • 4 tablespoons cold butter
  • 2 eggs, lightly beaten
  • 1/2 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
  • 1/4 cup currants

Preparation

  1. In a large bowl, mix flour, cream of tartar, baking soda, and sugar. Cut butter into flour mixture until coarsely blended. Stir in eggs; fold in yoghurt and currants.
  2. Drop by large spoonful's onto greased baking sheet. Bake at 400°F for 8 to 10 minutes until golden brown or toothpick inserted into scones comes out clean. Remove from baking sheet to cooling rack. Serve warm if desired.

Tips

  • Feel free to use Mountain High™ Plain Low Fat Yoghurt instead of Mountain High™ Original Plain Whole Milk Yoghurt, if you'd like.
