Pumpkin Pie

A healthful spin on a holiday classic. Use lowfat or fat free yoghurt to save more calories.

Ingredient List

  • 1/2 cup sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 2 eggs
  • 1 can (15 oz) canned pumpkin (not pumpkin pie mix)
  • 1 1/2 cups Mountain High® original, lowfat or fat free plain yoghurt
  • 9-inch unbaked pie crust
  • Additional Mountain High® vanilla yoghurt, if desired

Preparation

  1. In a small bowl, combine sugar, cinnamon, salt, ginger, and cloves.
  2. In a large bowl, beat eggs with an electric mixer for about 3 minutes on medium or until pale in color. Add pumpkin and spice mixture and mix well. Add yoghurt and mix until well combined.
  3. Pour batter into pie crust. Bake pie at 425° F for 15 minutes, then lower temperature to 350°F and continue baking for 40 to 45 minutes, until pie is set in the center. Transfer to a wire rack and cool completely.
  4. To serve, garnish with an additional dollop of yoghurt.
