Ingredient List

Bars

  • 2 cups granulated sugar
  • 4 eggs
  • 1 can (15 oz) pumpkin (not pumpkin pie filling)
  • 3/4 cup Mountain High® original or lowfat vanilla yoghurt
  • 1/4 cup vegetable oil
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1 teaspoon ground cinnamon
  • 1 cup chopped nuts

Frosting

  • 1/3 cup butter, softened
  • 1 package (8 oz) cream cheese, softened
  • 2 1/2 cups powdered sugar
  • 2 teaspoons vanilla
  • Orange sugar, if desired

Preparation

  1. Combine granulated sugar, eggs, pumpkin, yoghurt, and oil in a large bowl. Mix until well combined. Add flour, baking powder, baking soda, vanilla, cinnamon, and nuts. Mix until well combined.
  2. Grease and flour sides and bottom of a 15x10x1 inch pan. Pour batter into pan and bake at 350°F for 45 minutes until golden brown. Remove from oven and let cool completely in pan on cooling rack.
  3. To make the frosting, in a medium bowl with an electric mixer, mix the butter on medium speed until light and fluffy. Beat in the cream cheese. Add powdered sugar and vanilla and mix on low speed until smooth. Frost cooled bars. Sprinkle with orange sugar. Promptly refrigerate leftover bars.
