Orange Pumpkin Muffins

Ingredient List
- 1 3/4 cups all-purpose flour
- 2/3 cup packed brown sugar
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2 eggs
- 1 cup Mountain High® original or lowfat plain yoghurt
- 3/4 cup canned pumpkin (not pumpkin pie mix)
- 1 tablespoon grated orange peel
- 2 tablespoons vegetable oil
- 1 teaspoon vanilla extract
Preparation
- In a large bowl, combine flour, sugars, baking powder, cinnamon, nutmeg, and salt. In a medium bowl, beat the eggs. Add yoghurt, pumpkin, orange zest, oil, and vanilla extract, mixing well. Pour the wet ingredients into the dry ingredients; mix just until moistened.
- Spray 12 muffin cups with cooking spray. Divide batter evenly among muffin cups.
- Bake at 400°F for about 25 to 30 minutes, until muffins are golden brown and a toothpick inserted in the center comes out clean. Cool 5 minutes; carefully remove from pan to cooling rack. Serve warm if desired.
