These are sure to become a fall favorite, but they taste great any time of year. Try them with whipped cream cheese spread or butter and a drizzle of maple syrup. Yeah!

Ingredient List

  • 1 3/4 cups all-purpose flour
  • 2/3 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 eggs
  • 1 cup Mountain High® original or lowfat plain yoghurt
  • 3/4 cup canned pumpkin (not pumpkin pie mix)
  • 1 tablespoon grated orange peel
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract

Preparation

  1. In a large bowl, combine flour, sugars, baking powder, cinnamon, nutmeg, and salt. In a medium bowl, beat the eggs. Add yoghurt, pumpkin, orange zest, oil, and vanilla extract, mixing well. Pour the wet ingredients into the dry ingredients; mix just until moistened.
  2. Spray 12 muffin cups with cooking spray. Divide batter evenly among muffin cups.
  3. Bake at 400°F for about 25 to 30 minutes, until muffins are golden brown and a toothpick inserted in the center comes out clean. Cool 5 minutes; carefully remove from pan to cooling rack. Serve warm if desired.
