Lowfat Enchiladas

Ingredient List
- 1 1/2 cups Mountain High® original or lowfat plain yoghurt
- 1/4 cup sour cream
- 1 cup salsa verde
- 6 (6-inch) flour tortillas
- 1 cup cut-up cooked chicken
- 1/4 cup chopped onion
- Chopped cilantro or parsley, if desired
- Shredded cheese, if desired
Preparation
- In medium bowl, gently stir together yoghurt, sour cream, and salsa verde until well blended. Spread two tablespoons of mixture on each tortilla.
- Divide chicken and onion evenly over yoghurt mixture. Roll tortillas and place seam-side down in an 11x7-inch baking dish sprayed with cooking spray. Top with remaining yoghurt mixture. Bake uncovered at 350°F for 20 to 25 minutes, until bubbly. Sprinkle with cilantro and cheese.
