Lowfat Enchiladas

Ingredient List

  • 1 1/2 cups Mountain High® original or lowfat plain yoghurt
  • 1/4 cup sour cream
  • 1 cup salsa verde
  • 6 (6-inch) flour tortillas
  • 1 cup cut-up cooked chicken
  • 1/4 cup chopped onion
  • Chopped cilantro or parsley, if desired
  • Shredded cheese, if desired

Preparation

  1. In medium bowl, gently stir together yoghurt, sour cream, and salsa verde until well blended. Spread two tablespoons of mixture on each tortilla.
  2. Divide chicken and onion evenly over yoghurt mixture. Roll tortillas and place seam-side down in an 11x7-inch baking dish sprayed with cooking spray. Top with remaining yoghurt mixture. Bake uncovered at 350°F for 20 to 25 minutes, until bubbly. Sprinkle with cilantro and cheese.
