Ingredient List
Bread
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 2 eggs
- 2 tablespoons fresh lemon juice
- 1 tablespoon grated lemon peel
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- 1/2 cup Mountain High™ original plain yoghurt
Glaze
- 1 tablespoon fresh lemon juice
- 1/3 cup powdered sugar
- 1 teaspoon granulated sugar
Preparation
- Heat oven to 350°F. Cut 12x8-inch piece of cooking parchment paper. Line 8x4-inch loaf pan with parchment paper. Lightly spray with cooking spray.
- In large bowl, beat butter and 1 cup granulated sugar with electric mixer on medium speed until well blended. Beat in eggs, 2 tablespoons lemon juice and the lemon peel.
- In small bowl, mix flour, baking powder and salt. Gradually add flour mixture to butter mixture on low speed alternately with yoghurt, beating well after each addition. Pour into loaf pan; spread evenly.
- Bake 60 to 70 minutes or until toothpick inserted near center comes out clean. Cool 10 minutes; run spatula along short edges of bread; remove bread from pan to cooling rack.
- Meanwhile, in small bowl, mix 1 tablespoon lemon juice and the powdered sugar until smooth and drizzling consistency. Drizzle and spread over warm bread. Sprinkle with 1 teaspoon granulated sugar. Cool completely before slicing.
Tips
- Make two; wrap one up and freeze it -- perfect for unexpected guests.
- Use sparkling sugar for sprinkling over the finished loaf.
