Ingredient List

Bread

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon grated lemon peel
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/2 cup Mountain High™ original plain yoghurt

Glaze

  • 1 tablespoon fresh lemon juice
  • 1/3 cup powdered sugar
  • 1 teaspoon granulated sugar

Preparation

  1. Heat oven to 350°F. Cut 12x8-inch piece of cooking parchment paper. Line 8x4-inch loaf pan with parchment paper. Lightly spray with cooking spray.
  2. In large bowl, beat butter and 1 cup granulated sugar with electric mixer on medium speed until well blended. Beat in eggs, 2 tablespoons lemon juice and the lemon peel.
  3. In small bowl, mix flour, baking powder and salt. Gradually add flour mixture to butter mixture on low speed alternately with yoghurt, beating well after each addition. Pour into loaf pan; spread evenly.
  4. Bake 60 to 70 minutes or until toothpick inserted near center comes out clean. Cool 10 minutes; run spatula along short edges of bread; remove bread from pan to cooling rack.
  5. Meanwhile, in small bowl, mix 1 tablespoon lemon juice and the powdered sugar until smooth and drizzling consistency. Drizzle and spread over warm bread. Sprinkle with 1 teaspoon granulated sugar. Cool completely before slicing.

Tips

  • Make two; wrap one up and freeze it -- perfect for unexpected guests.
  • Use sparkling sugar for sprinkling over the finished loaf.
