You can make this year-round because frozen fruit works just as well. Simply allow to thaw and drain off any excess liquid.

Ingredient List

  • 1/3 cup Mountain High™ Yoghurt Cheese*
  • 1 sheet frozen puff pastry (from 17.3-oz package)
  • 1 cup sliced strawberries
  • 1 cup pitted dark sweet cherries
  • 1/4 cup sugar
  • 1 teaspoon vanilla
  • 1 egg white, beaten
  • Powdered sugar, if desired
  • Mountain High™ Original Vanilla Whole Milk Yoghurt, if desired

Preparation

  1. Prepare Mountain High™ Yoghurt Cheese.
  2. Cut pasty sheet in half lengthwise. Place one half on lightly-greased cookie sheet and prick with a fork.
  3. In a medium bowl, combine strawberries, cherries, yoghurt cheese, sugar, and vanilla. Spoon mixture onto pastry sheet, leaving a half-inch border around the edges. Top with remaining pastry sheet half.
  4. With a sharp knife, cut half-inch slits in the top pastry sheet, about every two inches, again leaving a half-inch border around the edges. Brush the edges of the pastry dough on the sheet pan with egg white. Press edges with fork to seal pastry on all sides.
  5. Bake at 400°F for 15 to 20 minutes or until golden. Cool slightly, sprinkle with powdered sugar and cut into 4 pieces. Serve warm with vanilla yoghurt.

Tips

  • *To make Mountain High™ Yoghurt Cheese, line medium colander with flat-bottomed paper coffee filters; place colander in bowl. Spoon 1 tub Mountain High™ original, lowfat or fat free plain yoghurt into lined colander. Cover strainer and bowl; refrigerate at least 12 hours. Discard whey (liquid) in bowl. Unmold cheese with strainer onto plate. Remove strainer; peel away coffee filter. Cover and refrigerate until ready to use. Makes about 1 1/4 cups.
  • Feel free to use Mountain High™ Vanilla Low Fat Yoghurt or Mountain High™ Vanilla Fat Free Yoghurt instead of Mountain High™ Original Vanilla Whole Milk Yoghurt, if you'd like.
