Yoghurt Tortellini

Fresh tortellini and fresh thyme make this dish extra wonderful, but frozen tortellini and dried thyme work great, too.

Ingredient List

  • 3 tomatoes, seeded and chopped
  • 1 teaspoon chopped fresh thyme leaves or 1/2 teaspoon dried thyme leaves
  • 2 cups Mountain High® plain yoghurt
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, crushed
  • 1 1/2 pounds mushrooms, sliced
  • 1 pkg (9 oz) refrigerated cheese-or spinach-filled tortellini
  • Thyme sprigs, if desired
  • Grated Parmesan cheese, if desired

Preparation

  1. In a large bowl, combine tomatoes and thyme. Add yoghurt, salt and pepper set aside.
  2. Heat the olive oil in a 12-inch skillet over medium heat. Cook and stir the onions, about 5 minutes or until translucent. Add garlic and cook for 2 more minutes. Add mushrooms and continue cooking for about 10 minutes, stirring occasionally, until mushrooms release their liquid and liquid is mostly gone.
  3. Meanwhile, cook tortellini according to package directions. When tortellini is done, drain and return to same pot. Add mushroom mixture and yoghurt mixture, stirring to coat the tortellini. Serve immediately. Garnish with thyme sprigs and Parmesan cheese.
