Peaches and Cream French Toast

Ingredient List

  • 12 eggs
  • 1/4 cup granulated sugar
  • 1 1/2 cups Mountain High® original or lowfat vanilla yoghurt
  • 1 cup packed brown sugar
  • 1 can (29 oz) sliced peaches in syrup, drained
  • 1 loaf French bread, cubed
  • 1 package (8 oz) cream cheese, cut into 32 cubes

Preparation

  1. Beat eggs and granulated sugar in a large bowl on high for about 3 minutes. Add yoghurt and beat about 30 seconds more. In a medium bowl, toss the peaches with the brown sugar.
  2. Place 1/2 of the bread cubes in the bottom of a greased 9x13-inch glass baking dish. Top with 1/2 of the sugared peaches. Evenly place the cubes of cream cheese over the bread and peaches. Top with remaining bread cubes. Top with remaining peaches, distributing them evenly among the bread cubes. Press down gently. Pour egg mixture over the peaches in the dish, evenly distributing the liquid over the entire pan. Cover and refrigerate overnight.
  3. Remove pan from the refrigerator and let rest at room temperature for about 30 minutes. Uncover and bake at 350°F for 45 to 50 minutes or until golden in color and firmly set.
