Chicken Pita Pockets with Tzaziki

Ingredient List

Tzaziki sauce

  • 1 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
  • 1 teaspoon finely chopped garlic
  • 1/2 cup peeled, seeded, and finely chopped cucumber

Pita pockets

  • 1 package (14 oz) chicken breast tenders (not breaded)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon olive oil
  • 2 pita (pocket) breads (6 inch), cut in half to form pockets
  • 8 leaves lettuce
  • 1/4 cup red onion slices
  • 2 medium tomatoes, sliced

Preparation

  1. In a medium bowl, combine yoghurt, garlic, and cucumber. Cover and chill for 2 to 3 hours to blend flavors.
  2. To make the pitas, season chicken with salt and pepper. In a 10-inch skillet over medium-high heat, heat the olive oil. Add chicken and cook for 2 to 3 minutes per side, turning once or until no longer pink in the center.
  3. Assemble each sandwich by lining a pita half with a lettuce leaf. Spoon in some warm chicken and onion pieces. Top with some Tzaziki sauce and tomato slices. Serve immediately.

Tips

  • Feel free to use Mountain High™ Plain Low Fat Yoghurt instead of Mountain High™ Original Plain Whole Milk Yoghurt, if you'd like.
