Ingredient List
- 1 1/2 cups yellow cornmeal
- 1/2 cup all-purpose flour
- 3 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs, lightly beaten
- 3/4 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
- 1/2 cup milk
- 3 tablespoons vegetable oil
- 1 cup cream style sweet corn (from a 14.5 oz can)
Preparation
- Combine the cornmeal, flour, sugar, baking powder, baking soda, and salt in a medium bowl.
- In a medium bowl, whisk together the eggs, yoghurt, milk, and oil. Stir in corn.
- Add the dry ingredients to the wet ingredients; stir until just combined.
- Pour the batter into a greased 8-inch square baking pan. Bake at 400°F about 30 minutes, until the top is golden brown and a toothpick inserted in the center comes out clean. Serve warm if desired.
Tips
- Feel free to use Mountain High™ Plain Low Fat Yoghurt instead of Mountain High™ Original Plain Whole Milk Yoghurt, if you'd like.
