Ingredient List

  • 1 1/2 cups yellow cornmeal
  • 1/2 cup all-purpose flour
  • 3 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs, lightly beaten
  • 3/4 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
  • 1/2 cup milk
  • 3 tablespoons vegetable oil
  • 1 cup cream style sweet corn (from a 14.5 oz can)

Preparation

  1. Combine the cornmeal, flour, sugar, baking powder, baking soda, and salt in a medium bowl.
  2. In a medium bowl, whisk together the eggs, yoghurt, milk, and oil. Stir in corn.
  3. Add the dry ingredients to the wet ingredients; stir until just combined.
  4. Pour the batter into a greased 8-inch square baking pan. Bake at 400°F about 30 minutes, until the top is golden brown and a toothpick inserted in the center comes out clean. Serve warm if desired.

Tips

  • Feel free to use Mountain High™ Plain Low Fat Yoghurt instead of Mountain High™ Original Plain Whole Milk Yoghurt, if you'd like.
