Ingredient List

  • 1 1/3 cups flaked coconut, toasted and divided
  • 1 1/2 cups finely crushed vanilla wafer cookies (about 42 cookies)
  • 1/2 cup butter, melted
  • 1 package (8 oz) cream cheese, softened
  • 1 cup Mountain High® original or lowfat vanilla yoghurt
  • 1 can (8 oz) crushed pineapple, well drained
  • 1/4 cup frozen pineapple-orange juice concentrate (from a 12-oz container), thawed
  • 2 tablespoons honey
  • 1 teaspoon grated orange peel
  • 1/3 cup chopped macadamia nuts
  • 1 cup heavy whipping cream
  • Orange wedges, if desired

Preparation

  1. Reserve 1/2 cup of the coconut. In a medium bowl, combine remaining coconut, crushed cookies, and butter. Press in bottom and up sides of a 9-inch pie plate. Bake at 350°F for 8 minutes. Cool completely.
  2. In a large bowl, beat cream cheese on medium speed with electric mixer until fluffy. Beat in remaining ingredients except whipped cream on low speed. Cover and chill for 30 minutes.
  3. Beat whipping cream with electric mixer in medium bowl on high speed until soft peaks form; fold into cream cheese mixture.
  4. Spread mixture in cooled crust. Cover and freeze 6 hours or until firm. Remove from freezer 10 to 15 minutes before cutting and serving. Garnish with orange wedges.
