These German cookies are sure to be crowd pleasers. Say “auf wiedersehen” to those boring ol’ chocolate chips!
Ingredient List
- 1/2 cup butter, softened
- 1 1/4 cups sugar
- Grated peel of 1 lemon
- Grated peel of 1 orange
- 2 eggs
- 1/2 teaspoon almond extract
- 2 tablespoons blanched and ground almonds
- 1/2 cup Mountain High® original or lowfat plain yoghurt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 3 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/8 teaspoon salt
- Powdered sugar
Preparation
- In a large bowl, beat butter, sugar, and lemon and orange peel on medium speed about 2 minutes. Add the eggs one at a time, beating well after each addition. Add almond extract, ground almonds, and yoghurt. Mix until just blended.
- Combine remaining ingredients except for powdered sugar in a small bowl. Add to butter mixture. Blend on low speed, scraping bowl frequently, just until mixed. Cover dough with plastic wrap; refrigerate at least 2 hours for easier handling.
- Place cookie dough onto a floured surface. Roll out dough to 1/2-inch thickness. Cut with a 3-inch cookie cutter and place 1 inch apart on an ungreased cookie sheet. Bake at 350°F for 15 to 18 minutes. Remove cookies to cooling racks; cool completely. Dust with powdered sugar.
Tips
- Pfeffernuesse, traditional German spice drop cookies, are especially popular at Christmas time. The small domed cookies are coated with confectioner’s glaze. To grind the almonds, use your coffee grinder or small food processor.
