Egg and Mushroom Strata

This make-ahead dish is great when you want an easy breakfast for guests or a lazy morning at home. Or you can make it in the morning for an easy dinner after a long day of work or play. Garnish with additional freshly sliced green onions and shredded cheese, if desired.

Ingredient List

  • 10 slices white or wheat bread, cubed
  • 6 eggs
  • 2 cups milk
  • 3/4 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
  • 2 teaspoons Dijon mustard
  • 1 clove garlic, finely chopped
  • 2 green onions, thinly sliced
  • 1/8 teaspoon kosher (coarse) salt
  • 1/4 teaspoon pepper
  • 2 cups shredded cheddar cheese (8 oz)
  • 1 1/2 cups sliced mushrooms

Preparation

  1. Arrange bread cubes in greased 13x9-inch pan. Sprinkle evenly with mushrooms. In a large bowl, whisk together eggs, milk, yoghurt, mustard, garlic, green onions, salt, and pepper. Stir in cheese. Pour evenly over bread cubes. Cover with plastic wrap and refrigerate overnight.
  2. Bake uncovered at 350°F for 50 minutes or until set. Let stand 5 to 10 minutes before serving.

Tips

  • Feel free to use Mountain High™ Plain Low Fat Yoghurt instead of Mountain High™ Original Plain Whole Milk Yoghurt, if you'd like.
