Egg and Mushroom Strata

Ingredient List
- 10 slices white or wheat bread, cubed
- 6 eggs
- 2 cups milk
- 3/4 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
- 2 teaspoons Dijon mustard
- 1 clove garlic, finely chopped
- 2 green onions, thinly sliced
- 1/8 teaspoon kosher (coarse) salt
- 1/4 teaspoon pepper
- 2 cups shredded cheddar cheese (8 oz)
- 1 1/2 cups sliced mushrooms
Preparation
- Arrange bread cubes in greased 13x9-inch pan. Sprinkle evenly with mushrooms. In a large bowl, whisk together eggs, milk, yoghurt, mustard, garlic, green onions, salt, and pepper. Stir in cheese. Pour evenly over bread cubes. Cover with plastic wrap and refrigerate overnight.
- Bake uncovered at 350°F for 50 minutes or until set. Let stand 5 to 10 minutes before serving.
Tips
- Feel free to use Mountain High™ Plain Low Fat Yoghurt instead of Mountain High™ Original Plain Whole Milk Yoghurt, if you'd like.
