Potato Casserole

A traditional favorite that tastes just like the original, but is lightened up with yoghurt.
Ingredient List
- 1 cup Mountain High® plain yoghurt
- 1 can (10 3/4 oz) condensed cream of chicken soup
- 3/4 cup butter, melted and cooled slightly
- 1/2 cup chopped onion
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1 pkg (26 oz) frozen shredded hash browns, thawed
- 1 cup crushed corn flakes
Preparation
- In a large bowl, mix yoghurt, soup, 1/2 cup of the melted butter, onion, salt, and pepper. Add hash browns and mix well to coat evenly. Pour mixture into a greased 9x13-inch baking dish.
- In a small bowl, combine corn flakes with remaining 1/4 cup melted butter. Sprinkle cornflake mixture evenly on top of casserole. Bake uncovered at 350°F for 45-60 minutes until golden brown on top.
