Spinach Artichoke Dip

Ingredient List
- 1 box (10 oz) frozen chopped spinach, thawed and squeezed to drain
- 1 can (14 oz) artichoke hearts, drained and chopped
- 1 cup Mountain High® original or lowfat plain yoghurt
- 1 cup shredded mozzarella cheese (4 oz)
- 1/4 cup chopped green onion
- 1 garlic clove, finely chopped
- 2 tablespoons chopped red pepper, if desired
- Crackers or toasted slices of French bread, if desired
Preparation
- Squeeze spinach to remove all water. In a medium bowl, mix all ingredients except bell pepper.
- Pour mixture into a one-quart casserole dish. Bake at 350°F for 20 to 25 minutes or until heated through. Remove from oven and sprinkle with bell peppers. Serve with crackers.
