Need a little morning sunshine? The warm lemony aroma of these golden muffins will awaken your senses as well as your appetite.

Ingredient List

  • 1/4 cup honey
  • 1/4 cup butter
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • Dash of salt
  • Dash of ground nutmeg
  • 1/2 cup chopped nuts, if desired
  • 1 cup Mountain High® original or lowfat plain yoghurt
  • 1 egg
  • 3 tablespoons fresh lemon juice
  • 2 teaspoons grated lemon peel

Preparation

  1. In 1-quart saucepan over low heat, stir honey and butter together until butter is melted. Remove from heat; let cool.
  2. Meanwhile, in medium bowl, mix flour, baking soda, salt, nutmeg and nuts. Set aside Whisk yoghurt, egg, lemon juice and lemon zest into honey mixture. Stir lemon mixture into dry ingredients just until moistened.
  3. Divide batter evenly among 12 greased muffin cups. Bake at 375°F for 20 to 25 minutes, until golden or a toothpick inserted into center of muffin comes out clean. Cool 5 minutes; carefully remove from pan to cooling rack. Serve warm if desired.
