A piña colada without the rum! Enjoy the refreshing taste of the tropics any time of the year.

Ingredient List

  • 2 cups Mountain High® original, lowfat or fat free vanilla yoghurt
  • 1 cup coconut milk
  • 1 cup chopped fresh pineapple or 2 cans (8-oz each) crushed pineapple, drained
  • 1 cup ice cubes
  • 1 tablespoon fresh lemon juice
  • Toasted coconut, if desired

Preparation

  1. Place all the ingredients except toasted coconut in a blender. Cover and blend on high until smooth. Serve immediately.

Tips

  • A piña colada without the rum. To make the coconut-rimmed glasses, pour a little coconut milk onto one small plate and toasted coconut onto another. Dip edge of each glass into coconut milk and then into toasted coconut.
