Easy appetizers that are great for a wine tasting or reception or as a side dish for a new take on the traditional cranberry sauce.

Ingredient List

  • 20 frozen mini fillo shells from 2 packages (2.1 oz each)
  • 1 cup Mountain High™ Yoghurt Cheese*
  • 2 tablespoons powdered sugar
  • 2 tablespoons cranberry relish
  • 2 tablespoons finely chopped pineapple
  • 2 tablespoons finely chopped pecans
  • Additional cranberry relish for garnish, if desired
  • Additional chopped pecans for garnish, if desired

Preparation

  1. Bake phyllo cups according to package directions. Cool completely.
  2. In a small bowl, gently combine the yoghurt cheese and powdered sugar. (Mix well but don't stir too aggressively or Yoghurt Cheese will thin.)
  3. Pat the chopped pineapple with a paper towel to absorb the liquid. To combine the pineapple, cranberry relish, and pecans with the Greek Yoghurt mixture, cut the ingredients in with a butter knife and a zig-zag motion. Be careful not to over mix or you will lose the color variation.
  4. Place one tablespoon of the cranberry mixture into each phyllo cup. Garnish with additional cranberry relish and pecans.

Tips

  • *To make Mountain High™ Yoghurt Cheese, line medium colander with flat-bottomed paper coffee filters; place colander in bowl. Spoon 1 tub Mountain High™ original, lowfat or fat free plain yoghurt into lined colander. Cover strainer and bowl; refrigerate at least 12 hours. Discard whey (liquid) in bowl. Unmold cheese with strainer onto plate. Remove strainer; peel away coffee filter. Cover and refrigerate until ready to use. Makes about 1 1/4 cups.
  • Garnish with a sprinkle of toasted shredded coconut.
