Chocolate Peanut Butter Fudge Cups

There’s nothing like a bite of rich fudge to make you happy. Even better, these have peanut butter in them.

Ingredient List

  • 3 cups powdered sugar
  • 1/2 cup unsweetened baking cocoa
  • 1/4 cup butter
  • 1/2 cup peanut butter
  • 1/4 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
  • 1 tablespoon vanilla
  • 1/8 teaspoon salt
  • Chopped peanuts, if desired

Preparation

  1. In medium bowl, mix powdered sugar and cocoa; set aside.
  2. Heat butter and peanut butter in a 2-quart saucepan over medium-low heat, stirring constantly, until melted. Stir in sugar mixture, yoghurt, vanilla, and salt.
  3. Increase heat to medium. Insert a candy thermometer into mixture and cook without stirring until it reaches 236°F (soft ball stage). Remove mixture from heat; stir about one minute to cool slightly.
  4. Place paper baking cup in each of 10 regular-size muffin cups; spray with cooking spray. Divide mixture evenly among cups. Sprinkle with nuts. Cool completely at room temperature.

Tips

  • Feel free to use Mountain High™ Plain Low Fat Yoghurt instead of Mountain High™ Original Plain Whole Milk Yoghurt, if you'd like.
