Great for a quick family dinner, or parties when you don’t want to serve a meal but need to offer something hearty. Easily doubled!

Ingredient List

  • 1 pound lean (at least 80%) ground beef
  • 1/4 cup chopped onion
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 can (15.5 oz) can diced tomatoes, drained
  • 2 teaspoons chopped jalapeño
  • 1 teaspoon finely chopped garlic
  • 3/4 cup ketchup
  • 1/2 cup frozen corn
  • 1/4 cup Mountain High® original or lowfat plain yoghurt
  • 8 small potato rolls

Preparation

  1. In a 10-inch skillet over medium heat, cook ground beef with onions, stirring occasionally, until beef is brown; drain. Stir in remaining ingredients except yoghurt and rolls. Heat to boiling; reduce heat. Simmer uncovered 10 to 15 minutes, stirring occasionally , until vegetables are tender. Stir in yoghurt; heat through. Serve on potato rolls.
