Savory Chicken Pasta Salad

A little effort pays off big in a dish that will impress your guests…that is, if you’re willing to share this savory delight!

Ingredient List

Marinade

  • 1 teaspoon paprika
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon kosher (coarse) salt
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon ground cumin
  • Juice of one lemon
  • 2 tablespoons chopped parsley
  • 1 1/2 cups Mountain High® original, lowfat or fat free plain yoghurt
  • 1 pound boneless, skinless chicken breasts
  • 2 2/3 cups uncooked rotini pasta (8 oz)
  • 1 cup chopped plum (Roma) tomatoes

Salad Dressing

  • 1 cup Mountain High® original or lowfat plain yoghurt
  • 1/2 cup golden raisins
  • 1 clove garlic, finely chopped
  • 2 tablespoons chopped parsley
  • 1 tablespoon honey
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon ground coriander
  • 1/8 teaspoon red pepper (cayenne)

Preparation

  1. To make the marinade, in a medium bowl, combine all marinade ingredients; mix well. Place chicken in a gallon freezer bag with a zippered closure and pour the marinade over it. Squeeze the air out of the bag and seal. Refrigerate in a bowl for 2 hours or overnight, turning occasionally.
  2. Remove chicken from marinade and let excess marinade drain off. Grill chicken breasts over direct medium heat for 6 to 8 minutes per side or until juice of chicken is clear when center of thickest part is cut (at least 165°F). Cool and cut into 1-inch cubes. Refrigerate while preparing the salad.
  3. Cook pasta according to package directions. Meanwhile, in a large bowl, combine the Salad Dressing ingredients.
  4. Drain the pasta and allow to cool slightly. Add the pasta to the salad dressing; toss to coat. Gently stir in chicken and tomatoes. Cover and refrigerate 2 hours to combine flavors. Garnish with additional chopped parsley.
