Savory Chicken Pasta Salad

Ingredient List
Marinade
- 1 teaspoon paprika
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground coriander
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon kosher (coarse) salt
- 1/4 teaspoon ground turmeric
- 1/4 teaspoon ground cumin
- Juice of one lemon
- 2 tablespoons chopped parsley
- 1 1/2 cups Mountain High® original, lowfat or fat free plain yoghurt
- 1 pound boneless, skinless chicken breasts
- 2 2/3 cups uncooked rotini pasta (8 oz)
- 1 cup chopped plum (Roma) tomatoes
Salad Dressing
- 1 cup Mountain High® original or lowfat plain yoghurt
- 1/2 cup golden raisins
- 1 clove garlic, finely chopped
- 2 tablespoons chopped parsley
- 1 tablespoon honey
- 1/4 teaspoon ground turmeric
- 1/4 teaspoon ground ginger
- 1/2 teaspoon ground coriander
- 1/8 teaspoon red pepper (cayenne)
Preparation
- To make the marinade, in a medium bowl, combine all marinade ingredients; mix well. Place chicken in a gallon freezer bag with a zippered closure and pour the marinade over it. Squeeze the air out of the bag and seal. Refrigerate in a bowl for 2 hours or overnight, turning occasionally.
- Remove chicken from marinade and let excess marinade drain off. Grill chicken breasts over direct medium heat for 6 to 8 minutes per side or until juice of chicken is clear when center of thickest part is cut (at least 165°F). Cool and cut into 1-inch cubes. Refrigerate while preparing the salad.
- Cook pasta according to package directions. Meanwhile, in a large bowl, combine the Salad Dressing ingredients.
- Drain the pasta and allow to cool slightly. Add the pasta to the salad dressing; toss to coat. Gently stir in chicken and tomatoes. Cover and refrigerate 2 hours to combine flavors. Garnish with additional chopped parsley.
