Classic Potato Salad

Ingredient List

  • 10 medium potatoes
  • 1/2 teaspoon salt
  • 1 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
  • 3 tablespoons tarragon or malt vinegar
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup chopped celery
  • 4 tablespoons grated or finely chopped red onion
  • 3 hard cooked eggs, cooled and chopped
  • 1 tablespoon chopped fresh parsley

Preparation

  1. In Dutch oven or 5-quart saucepan, place potatoes and 1/2 teaspoon salt. Add water just to cover. Heat to boiling; reduce heat to low. Cover; simmer 20 minutes or until tender. Drain; rinse with cold water to cool. Drain well. Cut into 1-inch pieces.
  2. In a large bowl, stir together yoghurt, vinegar, mustard, 1/4 teaspoon salt and pepper. Toss with celery, onions and eggs. Add potatoes; toss until coated evenly.
  3. Cover and chill 2 hours to blend flavors. Garnish with chopped parsley.

Tips

  • Feel free to use Mountain High™ Plain Low Fat Yoghurt or Mountain High™ Plain Fat Free Yoghurt instead of Mountain High™ Original Plain Whole Milk Yoghurt, if you'd like.
