Classic Potato Salad

Ingredient List
- 10 medium potatoes
- 1/2 teaspoon salt
- 1 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
- 3 tablespoons tarragon or malt vinegar
- 1 tablespoon Dijon mustard
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup chopped celery
- 4 tablespoons grated or finely chopped red onion
- 3 hard cooked eggs, cooled and chopped
- 1 tablespoon chopped fresh parsley
Preparation
- In Dutch oven or 5-quart saucepan, place potatoes and 1/2 teaspoon salt. Add water just to cover. Heat to boiling; reduce heat to low. Cover; simmer 20 minutes or until tender. Drain; rinse with cold water to cool. Drain well. Cut into 1-inch pieces.
- In a large bowl, stir together yoghurt, vinegar, mustard, 1/4 teaspoon salt and pepper. Toss with celery, onions and eggs. Add potatoes; toss until coated evenly.
- Cover and chill 2 hours to blend flavors. Garnish with chopped parsley.
Tips
- Feel free to use Mountain High™ Plain Low Fat Yoghurt or Mountain High™ Plain Fat Free Yoghurt instead of Mountain High™ Original Plain Whole Milk Yoghurt, if you'd like.
