A festive meal for any occasion, but especially fitting when you miss New Orleans.

Ingredient List

  • 4 slices bacon
  • 2 large yellow onions, chopped
  • 2 cups chopped celery (about 4 stalks)
  • 2 cups chopped green bell pepper
  • 1 tablespoon seafood seasoning
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes
  • 2 cans (14.5-oz each) cans diced tomatoes , drained
  • 2 cloves garlic
  • 1 1/2 pounds frozen cooked and deveined shrimp, thawed
  • 1 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
  • Red pepper sauce, if desired
  • 6 cups cooked white rice

Preparation

  1. Cook bacon in Dutch oven over medium-high heat until crisp. Remove bacon (leaving bacon drippings in pan); drain bacon on paper towels until cool. Crumble and set aside.
  2. Heat bacon drippings in Dutch oven over medium heat. Add onion, celery, bell pepper, seafood seasoning, black pepper, and red pepper flakes. Cook mixture for about 10 minutes, stirring frequently. Add tomatoes, garlic, and bacon crumbles. Stir well. Add shrimp, stirring to separate individual pieces. Reduce heat and simmer for about 10 minutes or until shrimp are pink.
  3. Remove from heat and gently stir in yoghurt until well mixed. Season with red pepper sauce. Serve over cooked rice.

Tips

  • Feel free to use Mountain High™ Plain Low Fat Yoghurt instead of Mountain High™ Original Plain Whole Milk Yoghurt, if you'd like.
