Stuffed Zucchini

The humble zucchini's versatility is its charm. It takes on flavors with minimal effort. This recipe makes a great side dish for any cuisine, from Italian to Moroccan.

Ingredient List

  • 3 large zucchini
  • 1 small onion
  • 1 cup walnut pieces
  • 18 mint leaves
  • 1/2 teaspoon kosher (coarse) salt
  • 1/4 teaspoon pepper
  • 1 teaspoon olive oil
  • 1 egg, beaten
  • 1/2 cup Mountain High® original or lowfat plain yoghurt
  • 1/2 cup Italian style bread crumbs

Preparation

  1. Cut each zucchini in half lengthwise. Scoop out center, leaving 1/4-inch shell, reserving flesh. Set aside.
  2. Place reserved zucchini flesh into a bowl of food processor. Add onion, walnuts, mint leaves, salt, pepper, and olive oil. Pulse several times, scraping down the sides as necessary. Add the egg to the food processor along with the yoghurt and bread crumbs. Pulse to combine the mixture.
  3. Place mixture into a decorating bag fitted with a large star tip. (Or place mixture in a resealable gallon plastic bag. Squeeze out excess air from bag; seal. Cut off small tip from one corner of bag for piping.) Pipe into the hollowed out zucchini.
  4. Place zucchini in a greased 13x9-inch casserole dish; cover with foil. Bake at 350°F for about 30 minutes until zucchini is tender all the way through. Serve warm.
