Farfalle with Zucchini and Sundried Tomatoes

So delicious and easy, you can almost forget how healthy it is, too! The freshly grated nutmeg makes a big difference, so it’s worth the effort to dig out the spice mill.

Ingredient List

  • 1 pound uncooked bow-tie (farfalle) pasta
  • 4 medium zucchini (about 1½ pounds), sliced
  • 1 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
  • 1 cup freshly grated Parmigiano-Reggiano cheese
  • 4 tablespoons butter, melted
  • Dash of freshly grated nutmeg
  • 1/2 teaspoon kosher (coarse) salt
  • 1/8 teaspoon Freshly ground black pepper
  • 1 cup sun-dried tomatoes in oil, drained and chopped

Preparation

  1. Cook pasta as directed on package for al dente. About 1 minute before the farfalle is done, add the zucchini to the pot. Drain the farfalle and zucchini, reserving 1/4 cup of the pasta cooking water.
  2. Meanwhile, in a medium bowl, mix yoghurt, cheese and butter. Stir in nutmeg, salt, and pepper.
  3. Return the farfalle and zucchini to the pasta pot and add the sun-dried tomatoes, reserved pasta water, and yoghurt sauce. Cook over low heat, tossing mixture until the sauce coats the pasta and mixture is warm throughout. Transfer to warmed bowls and serve with the extra cheese sprinkled on top, if desired.
