Ingredient List

  • 1 cup all-purpose flour
  • 1 cup unsweetened baking cocoa
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1 1/2 cups granulated sugar
  • 1 cup packed brown sugar
  • 1 tablespoon vanilla
  • 2 teaspoons instant coffee granules
  • 3 eggs
  • 3/4 cup Mountain High® original or lowfat plain yoghurt
  • Unsweetened baking cocoa or powdered sugar, if desired

Preparation

  1. In a small bowl, combine the flour, the cup of cocoa, baking soda, and salt. Mix well and set aside.
  2. In a large bowl, mix the butter and sugars with an electric mixer on medium speed. Mix in vanilla and coffee crystals. Add the eggs one at a time, mixing each one in well. Add the yoghurt and mix just until blended. Add the dry ingredients and mix just to combine.
  3. Pour into a greased 13x9-inch baking pan. Bake at 350°F for 25 to 30 minutes, until a toothpick inserted in the center comes out clean. Cool completely and dust with additional cocoa or powdered sugar.
