Yoghurt Baked Chicken

Tender, savory chicken like this tastes great with richly flavored breads like a focaccia or a rustic loaf flavored with kalamata olives or rosemary and garlic.

Ingredient List

  • 4 tablespoons butter
  • 1 medium white onion, thinly sliced
  • 1 cup sliced mushrooms
  • 1 cut-up whole chicken (about 3 lbs)
  • 2 tablespoons all-purpose flour
  • 1 tablespoon ground paprika
  • 1 tablespoon chopped fresh parsley
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 cups Mountain High® original plain yoghurt

Preparation

  1. Melt 2 tablespoons of the butter in a 12-inch skillet over medium heat. Cook and stir onions and mushrooms 3 to 5 minutes or until softened. Remove vegetables to heatproof bowl; set aside.
  2. Heat remaining 2 tablespoons butter over medium-high heat. Brown chicken on all sides in skillet; remove chicken from skillet to a buttered 13x9-inch baking dish. Heat drippings in skillet over medium heat. Quickly stir flour, paprika, salt and pepper into to pan juices. Heat to boiling, stirring constantly, until mixture is smooth and bubbly; remove from heat. Stir in yoghurt and mushroom mixture. Spoon mixture over chicken.
  3. Cover with foil and bake at 350°F for 30 to 45 minutes or until juice is clear when thickest piece is cut to bone (at least 165°F). Serve sauce over chicken.
