Creamy Tarragon Seafood Sauce

Ingredient List
- 1 teaspoon olive oil
- 1 tablespoon finely chopped shallot
- 1 teaspoon cornstarch
- 1/3 cup chicken broth
- 1 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
- 1 teaspoon sugar
- 1 teaspoon fresh lemon juice
- 1 tablespoon finely chopped fresh tarragon leaves
- 1/4 teaspoon kosher (coarse) salt
- 1/4 teaspoon fresh cracked pepper
Preparation
- Heat olive oil in a 1-quart saucepan over medium heat. Add shallots and cook for about 1 minute.
- Meanwhile, in a small bowl, combine cornstarch with chicken broth and mix well. Pour broth mixture into shallot in pan. Cook for about 2 minutes or until thickened, stirring frequently.
- Stir in remaining ingredients. Continue cooking for about one minute or until warmed through. Remove from heat and serve over your favorite grilled fish or seafood.
Tips
- Feel free to use Mountain High™ Plain Low Fat Yoghurt instead of Mountain High™ Original Plain Whole Milk Yoghurt, if you'd like.
