Creamy Tarragon Seafood Sauce

Ingredient List

  • 1 teaspoon olive oil
  • 1 tablespoon finely chopped shallot
  • 1 teaspoon cornstarch
  • 1/3 cup chicken broth
  • 1 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
  • 1 teaspoon sugar
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon finely chopped fresh tarragon leaves
  • 1/4 teaspoon kosher (coarse) salt
  • 1/4 teaspoon fresh cracked pepper

Preparation

  1. Heat olive oil in a 1-quart saucepan over medium heat. Add shallots and cook for about 1 minute.
  2. Meanwhile, in a small bowl, combine cornstarch with chicken broth and mix well. Pour broth mixture into shallot in pan. Cook for about 2 minutes or until thickened, stirring frequently.
  3. Stir in remaining ingredients. Continue cooking for about one minute or until warmed through. Remove from heat and serve over your favorite grilled fish or seafood.

Tips

  • Feel free to use Mountain High™ Plain Low Fat Yoghurt instead of Mountain High™ Original Plain Whole Milk Yoghurt, if you'd like.
