Bring these spicy little pies to your next party and you might have to bring them to every gathering.

Ingredient List

  • 3/4 pound bulk spicy pork sausage
  • 1 large onion, chopped
  • 1 cup drained diced tomatoes (from an 14.5 oz can)
  • 2 teaspoons chili powder
  • 1/2 teaspoon ground cumin
  • 1 teaspoon coriander seed, crushed
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2/3 cup golden raisins
  • 1/4 cup chopped walnuts
  • 1/8 teaspoon chipotle powder
  • 1/4 cup 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
  • 2 packages (1.1 lb each) frozen puff pastry
  • 1 egg white

Preparation

  1. In a large skillet over medium-high heat, cook sausage and onions for about 4 minutes; drain. Add tomatoes, chili powder, cumin, coriander, salt, and pepper. Cook for an additional 5 minutes.
  2. Add raisins, walnuts, and chipotle powder. Mix well and remove from heat. Add yoghurt and mix well.
  3. Working with one sheet of puff pastry at a time, unfold pastry and cut out 3 1/2-inch rounds with a cookie cutter. With a pastry brush, brush egg white around the outer edges of rounds. Place one teaspoon of the sausage mixture in the center of each round, then fold rounds in half. Using a fork, press the tines around the edge of rounds to seal the empanadas. Place on large cookie sheet lined with foil or cooking parchment paper and sprayed lightly with cooking spray. Repeat with remaining rounds and filling.
  4. Bake at 375°F for about 18 to 20 minutes or until golden brown.

Tips

  • Feel free to use Mountain High™ Plain Low Fat Yoghurt instead of Mountain High™ Original Plain Whole Milk Yoghurt, if you'd like.
