Chicken Nachos

Ingredient List

  • 2 boneless, skinless chicken breasts (about 8 oz)
  • 2 teaspoons olive oil
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon finely chopped jalapeño pepper
  • 1 plum (Roma) tomato, seeded and diced
  • 2 tablespoons from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon ground cumin
  • 1 teaspoon finely chopped garlic
  • 1 tablespoon chopped fresh cilantro
  • 2 tablespoons diced red onion
  • 1 small avocado, diced
  • 2 tablespoons fresh lime juice (about 1 lime, juiced)
  • Dash of chipotle chili powder or regular chili powder
  • Tortilla chips, if desired

Preparation

  1. Coat chicken in olive oil, then season both sides with chili powder, salt, and pepper. Place in 8-inch baking dish sprayed with cooking spray. Bake at 400°F for about 8 to 10 minutes, or until clear when center of thickest part is cut (165°F). Remove chicken to cutting board; cool 5 minutes. Shred chicken using two forks.
  2. In a medium bowl, combine shredded chicken, jalapeño, tomato, yoghurt, coriander, cumin, garlic, cilantro, and onion. Mix well.
  3. Toss avocado in lime juice. Gently fold into chicken mixture. Add a dash of chipotle chili powder to add a smoky heat. Mound mixture on tortilla chips and serve.

Tips

  • Feel free to use Mountain High™ Plain Low Fat Yoghurt or Mountain High™ Plain Fat Free Yoghurt instead of Mountain High™ Original Plain Whole Milk Yoghurt, if you'd like.
