
Chicken Nachos

Ingredient List
- 2 boneless, skinless chicken breasts (about 8 oz)
- 2 teaspoons olive oil
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 tablespoon finely chopped jalapeño pepper
- 1 plum (Roma) tomato, seeded and diced
- 2 tablespoons from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
- 1/4 teaspoon ground coriander
- 1/4 teaspoon ground cumin
- 1 teaspoon finely chopped garlic
- 1 tablespoon chopped fresh cilantro
- 2 tablespoons diced red onion
- 1 small avocado, diced
- 2 tablespoons fresh lime juice (about 1 lime, juiced)
- Dash of chipotle chili powder or regular chili powder
- Tortilla chips, if desired
Preparation
- Coat chicken in olive oil, then season both sides with chili powder, salt, and pepper. Place in 8-inch baking dish sprayed with cooking spray. Bake at 400°F for about 8 to 10 minutes, or until clear when center of thickest part is cut (165°F). Remove chicken to cutting board; cool 5 minutes. Shred chicken using two forks.
- In a medium bowl, combine shredded chicken, jalapeño, tomato, yoghurt, coriander, cumin, garlic, cilantro, and onion. Mix well.
- Toss avocado in lime juice. Gently fold into chicken mixture. Add a dash of chipotle chili powder to add a smoky heat. Mound mixture on tortilla chips and serve.
Tips
- Feel free to use Mountain High™ Plain Low Fat Yoghurt or Mountain High™ Plain Fat Free Yoghurt instead of Mountain High™ Original Plain Whole Milk Yoghurt, if you'd like.
