Sweet Potato Salad

The sweet potato is the unsung hero of the vegetable bin. You can serve it hot or cold, solo, in a pie, in a side dish, or--as showcased here--in a deliciously refreshing salad.

Ingredient List

  • 1 1/2 pounds sweet potatoes
  • 2 stalks celery, chopped
  • 1/2 cup (from a 8-oz can) drained crushed pineapple
  • 1/2 cup chopped walnuts, toasted
  • 2 tablespoons finely chopped shallot
  • 1 cup Mountain High® original, lowfat or fat free vanilla yoghurt
  • 2 tablespoons soy sauce
  • 1 tablespoon finely chopped gingerroot
  • 1/2 teaspoon five-spice powder
  • 1 tablespoon honey
  • Additional Mountain High® original, lowfat or fat free vanilla yoghurt, if desired

Preparation

  1. Prick sweet potatoes several times with fork; place on paper towel in microwave. Microwave on High 8 to 10 minutes, turning potatoes over once halfway through cooking, just until potatoes are almost tender. Allow to cool to room temperature; peel and cut into 1-inch cubes.
  2. Place sweet potatoes, celery, pineapple, and walnuts in a large bowl. Toss to combine.
  3. In a medium bowl, gently combine shallot, yoghurt, soy sauce, ginger, five spice powder and honey. Pour yoghurt mixture over potato mixture and stir to coat all pieces evenly
  4. Cover and chill for two hours before serving to blend flavors. Serve with a dollop of additional yoghurt. Cover and refrigerate any leftover salad.
