Chicken Curry

Ingredient List
- 2 tablespoons olive oil
- 2 large onions, chopped (2 cups)
- 1 tablespoon curry powder
- 3 to 4 boneless, skinless chicken
- 1/2 teaspoon red pepper flakes
- 2 medium yellow summer squash, cut in half lengthwise, then cut crosswise into 1/2-inch slices (about 2 cups)
- 2 medium red bell peppers, chopped (2 cups)
- 1 teaspoon grated gingerroot
- 1/2 cup chicken broth
- 2 cup frozen peas
- 1/2 cup shredded coconut
- 1 cup golden raisins
- 1 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
- 6 cups cooked white rice
- 1/2 cup chopped toasted peanuts
Preparation
- Heat oil in a 12-inch skillet over medium heat. Add onions; cook and stir 3 minutes. Add curry and cook and stir for 2 more minutes. Add chicken strips and red pepper. Cook for 5 more minutes.
- Add squash, bell pepper, ginger, and chicken broth. Cook 3 minutes. Stir in frozen peas. Cook for an additional 2 to 5 minutes until chicken is no longer pink in the center and vegetables are tender. Stir in coconut, raisins, and yoghurt; heat through. Serve over hot rice and garnish with chopped peanuts.
