Ingredient List

  • 2 tablespoons olive oil
  • 2 large onions, chopped (2 cups)
  • 1 tablespoon curry powder
  • 3 to 4 boneless, skinless chicken
  • 1/2 teaspoon red pepper flakes
  • 2 medium yellow summer squash, cut in half lengthwise, then cut crosswise into 1/2-inch slices (about 2 cups)
  • 2 medium red bell peppers, chopped (2 cups)
  • 1 teaspoon grated gingerroot
  • 1/2 cup chicken broth
  • 2 cup frozen peas
  • 1/2 cup shredded coconut
  • 1 cup golden raisins
  • 1 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
  • 6 cups cooked white rice
  • 1/2 cup chopped toasted peanuts

Preparation

  1. Heat oil in a 12-inch skillet over medium heat. Add onions; cook and stir 3 minutes. Add curry and cook and stir for 2 more minutes. Add chicken strips and red pepper. Cook for 5 more minutes.
  2. Add squash, bell pepper, ginger, and chicken broth. Cook 3 minutes. Stir in frozen peas. Cook for an additional 2 to 5 minutes until chicken is no longer pink in the center and vegetables are tender. Stir in coconut, raisins, and yoghurt; heat through. Serve over hot rice and garnish with chopped peanuts.
