There’s nothing like the aroma of freshly baked banana bread and this one is so light and moist because of the yoghurt! If you like really hearty slices, you can cut it into 8 thick slices.

Ingredient List

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup from 1 tub Mountain High™ Original Plain Whole Milk Yoghurt
  • 2 bananas, mashed
  • 1 teaspoon vanilla
  • 1/2 cup chopped walnuts or pecans

Preparation

  1. In a large bowl, mix butter and sugar until well mixed. Add eggs and beat well. Add flour, baking soda, and salt. Mix well. Stir in yoghurt, bananas, vanilla, and nuts.
  2. Pour batter into a 9x5-inch greased and floured loaf pan. Bake at 350°F for 50 to 60 minutes until golden brown and a toothpick inserted into center comes out clean. Cool in pan 10 minutes on cooling rack.
  3. Loosen sides of loaves from pan; remove from pan and place top side up on cooling rack. Cool completely, about 2 hours, before slicing.

Tips

  • Feel free to use Mountain High™ Plain Low Fat Yoghurt or Mountain High™ Original Vanilla Whole Milk Yoghurt or Mountain High™ Original Vanilla Whole Milk Yoghurt instead of Mountain High™ Original Plain Whole Milk Yoghurt, if you'd like.
