- 1 teaspoon finely chopped garlic
- 1/2 cup peeled, seeded and finely chopped cucumber
- 1 teaspoon olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- Finely chopped fresh mint leaves, if desired
Preparation
- In a medium bowl, gently combine all ingredients. Cover and chill for 2 hours to blend flavors. Garnish with mint leaves.
