Whole Wheat Chocolate Chip Zucchini Mini Muffins

Move over oil--here comes Mountain High® yoghurt! These tasty little zucchini muffins make a great breakfast or snack.

Ingredient List

  • 1 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 2/3 cup Mountain High® lowfat vanilla yoghurt
  • 1/2 cup sugar
  • 1 egg
  • 1 cup shredded zucchini
  • 1/2 cup miniature semisweet chocolate chips

Preparation

  1. Heat oven to 350°F. Spray 36 mini muffin cups with cooking spray.
  2. In large bowl, stir together flours, baking soda, baking powder, cinnamon, nutmeg and salt. In small bowl, stir together yoghurt, sugar and egg. Make well in center of dry ingredients. Add egg mixture; mix until just blended. Stir in zucchini and chocolate chips just until combined. Fill muffin cups about three-fourths full (about 1 tablespoon per cup).
  3. Bake 15 to 20 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes in pan; remove from pan to cooling rack. Enjoy warm or completely cool.

Tips

  • Store extra muffins in freezer in tightly sealed container up to 1 month.
  • For a quick lunch box idea, pack frozen muffins in your child's lunch box. They will be thawed and ready to eat by the time lunch rolls around.
