Ingredient List

  • 1 cup Mountain High® original or lowfat plain yoghurt
  • 1 egg
  • 1 tablespoon vegetable oil
  • 1/2 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon kosher (coarse) salt
  • 1 teaspoon fresh lemon juice
  • 1/8 teaspoon ground red pepper (cayenne) or chipotle chili powder
  • 1 cup shredded cheddar cheese (4 oz)
  • 1 cup fresh or frozen (thawed) corn kernels
  • 1 can (4 oz) diced green chiles, drained
  • 1 cup red bell pepper, diced

Preparation

  1. In a large bowl, whisk together yoghurt, egg, and oil.
  2. In medium bowl, combine flour, cornmeal, sugar, baking powder, salt, lemon juice and chili powder. Add the dry ingredients to the wet, just until moistened. Batter should be lumpy. Fold in the cheese, corn, green chiles, and bell pepper.
  3. Divide batter evenly among 12 greased muffin cups. Bake at 400°F for about 20 minutes until golden or until a wooden toothpick inserted into the center comes out clean. Cool 5 minutes; carefully remove from pan to cooling rack. Serve warm if desired.
