Striped Pasta Salad

Ingredient List

  • 2 cups uncooked elbow macaroni (8 oz)

Honey Mustard Dressing:

  • 1 1/2 cups Mountain High® original or lowfat plain yoghurt
  • 1 tablespoon ground turmeric
  • 1/2 teaspoon onion powder
  • 3 tablespoons honey
  • 3 tablespoons Dijon mustard
  • 1/4 teaspoon kosher (coarse) salt
  • 1/4 teaspoon pepper
  • 1 1/2 cups celery, chopped
  • 1 1/2 cups cubed honeydew melon
  • 1 1/2 cups sliced green onions
  • 1 1/2 cups baby spinach leaves
  • 1 1/2 cups sliced asparagus, blanched*
  • 1 1/2cups frozen green peas, cooked, drained

Preparation

  1. Cook macaroni according to package directions. Drain pasta; rinse with cold water. Shake to drain well.
  2. In a large bowl, gently stir together Honey Mustard Dressing ingredients until well blended. Stir in macaroni. Cover and chill, about 2 hours.
  3. In a large rectangular glass or ceramic serving dish, line up one half of the macaroni mixture along the left short side. Working left to right, add celery, melon, onions, spinach, asparagus, and peas in "stripes." Finish with a stripe of the remaining macaroni along the right side.
  4. Cover and chill for 2 to 3 hours before serving to blend flavors. Cover and refrigerate any leftover salad.

Tips

  • *To blanch asparagus, drop spears into a Dutch oven of boiling water and cook for about two minutes; drain. Immediately plunge into a bowl of ice water. Drain asparagus when cool.
