Ingredient List

  • 1 tablespoon butter
  • 1 3/4 cups sliced fresh mushrooms ( from an 8-oz package)
  • 1 cup Mountain High® original or lowfat plain yoghurt
  • 2 tablespoon all-purpose flour
  • 1 box (9 oz) French cut frozen green beans, thawed
  • 1 tablespoon sugar
  • 1/2 teaspoon kosher (coarse) salt
  • 1/4 teaspoon pepper
  • 1 1/3 cups (from a 6-oz container) French-fried onions

Preparation

  1. Heat butter in 10-inch skillet over medium heat. Cook and stir mushrooms in butter 4 to 5 minutes or until softened. Remove from heat; drain.
  2. In a large bowl, combine yoghurt with flour. Stir in green beans, sugar, salt, pepper, and mushrooms. Add 2/3 cup of the fried onions and mix well. Pour into a 1 1/2-quart casserole dish. Top with the remaining fried onions. Bake at 350°F for about 30 minutes, until bubbly around edges.
